Also known as "Cassatelle di Sant'Agata", Minnuzze di Sant'Agata is a round-shaped sweets made with sponge cake soaked in rosolio and stuffed with ricotta, chocolate drops, and candied fruit, such as oranges or citrons. The outside is covered in white icing and finished with a candied cherry on top. The ricotta is made strictly from sheep's milk.

Small and delicate, the Olivette di Sant'Agata are sweet almond paste, scented with rum and coloured in green, prepared in Catania between January and February to celebrate the patron saint of the Etnean capital.
According to tradition, the olive shape recalls a miracle that happened during Saint's life. While Agata was walking to the prison, she knelt to fasten a shoe and in the same places where she had touched the floor an olive tree was born, as soon it became large, lush and full of fruit.
